It’s the old fulcrum and lever trick. The longer the lever (and therefore farther) from the pivot point (fulcrum) the less energry is required to move the opposing force (tight nut, door hinge, bike tire). In the case of the door handle, imagine it placed two inches from the hinges. You now not only have to move the hinge but also all the weight of the door from the handle outwards.
